Backlogs are the list of tasks planned & need to be done in order to complete the project. Backlog or Product Backlog as commonly known in the agile methodology is a list of all features, epics, stories and tasks that the product owner would like to develop.
Backlog is owned by the Product Owner, he prioritizes it and the Scrum team picks up items from the backlog into a Sprint and work on them.
Note: Backlog is only applicable and visible when you have chosen a Scrum project. Hence, if you want to use Backlogs & run Sprints, then select the Scrum template from the Template dropdown field in the create project form. Else, you will be able to see them when you navigate to an existing Scrum project.
There are 2 ways you can add a task to the Backlog;

You can use filters to find the following information-
Note: The Scrum Board will show tasks in 3 highlevel states – TO DO, IN Progress & Done. However, if you have used a custom status workflow, then the custom status with 0% progress will be mapped to the TO DO column. All custom status with progress>0% and less than<100% will be mapped to the IN-Progress column and the last status with 100% progress will be mapped to the Done column.
Also, you will not be able to add custom columns to the Scrum Board.

Note: The backlog section only displays new or in-progress items. Closed tasks or stories are not shown here. To view closed tasks or stories, please refer to the task list page and use the filter to find the specific task or story you’re looking for.
